Grilled Chicken Quesadilla

A quesadilla is a Mexican food made primarily of cheese inside a folded tortilla and cooked until the cheese melts
Occasionally additional ingredients are added with the cheese to add variety to the dish

Here I warmed some chicken,mushroom and orange bell pepper in a cast iron grill pan.

Then warmed a flour tortilla and placed the cheese on first then the chicken, mushrooms and bell peppers and added a little more cheese.

Fold and place back on the grill till the cheese is melted and outside of tortilla is crispy.

Cut and serve.
